Of Danish origin, Havarti is a mild cheese, with a moist-looking, yellowish exterior. It has an ivory-coloured body with irregular openings; a supple, creamy consistency; and a pronounced, buttery smell. It is available in a creamy version, as well as flavoured with caraway, dill, herbs and spices, garden vegetables, jalapeno, olives and oregano, roasted garlic, sour cream and chives, and tomato. A light, low cholesterol version is also available. This cheese is superb melted, sliced, in sandwiches or salads, or served with fruits or vegetables, and is also a splendid addition to a cheese tray.
