Colby is a rindless, firm, orange cheese, with a springy texture, slightly softer than Cheddar. It has a delectably mellow, milky-buttery flavour. A rennet-free version, which is white, is also available. Like Cheddar, Colby can be used in numerous ways, from snacks to desserts.
