Stilton is a British cheese, made only in the counties of Leicestershire, Nottinghamshire and Derbyshire. It is a velvety, close-textured, unpressed cheese, with a smooth, creamy-white to pale-ivory interior, marbled with a network of greenish-blue veins. Its rind is dry, crusty, greyish-brown, and slightly wrinkled, with white powdery patches. Mellowly rich with a mouldy tang that is neither overly pungent nor salty, Stilton is an excellent snack and dessert cheese.

Wine Pairings: Tawny Port and stilton is a classic combination.
