Originally an Italian ewes' milk cheese, Asiago is now made from cows' milk.
Springbank Cheese offers Domestic, American and Italian versions. Our most popular Asiago is Black Wax, a semi-firm cheese, which has a glossy rind covered in black wax and a yellow interior, with small eyes. Asiago has a nutty richness and sharp tang and is suitable for grating, or as an after-dinner or snack cheese.
Serve with
Wine Pairing: Reds like Barolo and Chianti (Sangiovese) or a rich Napa
Cabernet Sauvignon, Bourdeaux, Brunello, Grenache, Meritage, Tempranillo,
Zinfandel. Other beverages: Cider, cranberry juice and sparkling red grape
