Sometimes unnecessarily called Red Leicester, since there is no other kind, this is a hard-pressed grainy cheese, with a faint lemony taste. Its reddish-orange colour makes Leicester wheels the most visually striking of all British cheeses. It is a good melting cheese and fine snack food.
