Swiss/Emmenthal has a firm, pale yellow to ivory body, with large eyes uniformly distributed throughout. It has a delicately sweet, nutty flavour, and is also available as an organic product.  A superb cheese for fondues and "au gratin" dishes, it also makes a delicious snack on bread or crackers. For convenience, shredded Swiss/Emmenthal is available in controlled-atmosphere bags.

Wine Pairings: Sauvignon Blanc, young Cabernet Sauvignon, light-bodied Pinot Noir, Beaujolais, Châteauneuf-du-Pape.
