Ricotta is a white, fresh cheese, made from the whey of cows' milk. Although granular and similar to cottage cheese, it is creamier and softer in texture, and milder in taste. A mellow, milky cheese, succulently moist and wonderfully refreshing, it is a main ingredient in many traditional Italian dishes and is also popular as a filling and in desserts.
