A pasta filata cheese, originally from southern Italy, Provolone is shaped like a sausage. It has a whitish-yellow, fibrous interior, and mild, slightly tart taste. The smoked version has added flavour. A light version is also available. Delicious as a snack or with appetizers, especially when accompanied by fruit, Provolone is also a good cooking cheese.
